3lbschicken wings, split at the joints, tips removed
1/2cupminced scallions
2tbspsbutter
2tbspsgrated ginger
2tbspsgrated soy sauce
2tbspsgrated mirin(or sake)
3/4tspkosher salt
3/4tspsesame oil
Instructions
Roast the wings.Preheat oven to 425 degrees F.Grease two rimmed baking sheets.Season the wings with salt and pepper.
Spread wings in a single layer on the baking sheets.Roast wings until very crisp, about 45 minutes in a saucepan, heat all ingredients except for the wings.
