Joint and skin the chicken then put the pieces to one side. Chop the onions and fry until lightly browned. Add the cumin seeds, grated ginger and garlic, and fry for a few minutes.
Add the chicken pieces to the pan and brown. Then add the rest of the spices and fry for a few minutes.
Add salt, the chopped tomato and some water then bring to the boil and simmer for at least 1 hour.
