Stir together lime juice, fish sauce, honey and Chile-garlic sauce. Set it aside. Warm chicken stock in a medium heavy-bottomed pot over medium flame until it starts simmering.
Now you should combine ground turkey and simmer till cooked through. As the turkey is cooking, occasionally whisk to break up the meat. This should take approx eight to nine minutes.
Add green onion, shallot, chilies and lemongrass. Continue stirring to blend. Continue cooking till shallots turn translucent and stir occasionally (approximately seven minutes).
Remove from the heat and drain off any liquid in the pot. Whisk in lime juice fish sauce mixture, mint, and cilantro. Season to taste with low sodium salt.
Shift mixture to a large bowl and serve beside a pile of lettuce leaves. Using a spoon, scoop onto the lettuce leaves. Enjoy
