Instructions
Wash and drain the rice then set aside to dry.
Finely chop the onion and dice the carrot, pepper and beans.
Heat a little oil in a saucepan, fry the onions lightly, then add the carrots.
Next add the rice and cook for a few minutes, stirring continuously to coat the rice in oil.
Add 2 cups of water, salt, and bring to the boil.
Add the rest of the vegetables then simmer with the lid on for 12 to 15 minutes.
