For the dish
Four 4-ounce boneless,
skinless chicken breasts
8ounceskale
1avocado, sliced
Instructions
For the marinade In a blender, add all marinade ingredients and blend until a liquid marinade forms. Set aside. Tip: For easy grating, store ginger in the freezer and use as needed.
For the dishPlace chicken in a baking dish.Pour marinade over chicken and cover. Refrigerate for 1 hour. Preheat oven to 350°.
Drain marinade from baking dish and set aside to make jerk sauce.Bake chicken for 45-60 minutes or until internal temperature reaches 165°.
Tip: Baste chicken while cooking.Meanwhile, steam kale for about 5 minutes or until leaves are wilted.
Divide kale among 4 plates. Place one breast over kale. Top with avocado slices.
