Materials
1ccut green beans
1cpeas or lima beans
1ccarrots Sliced
1/2head cauliflower cut into
1flowerets
1water Boiling
1/2cmushrooms sliced
2Tbutter
2Tflour
1chot milk
2egg yolks beaten
1/4tsalt
1/4tblack pepper
Instructions
Cook vegetables except mushrooms in small amount of boiling salted water for 35 minutes use 1/2 teaspoon salt per quart of water.
Drain. Saute mushrooms in butter. Blend in flour. Brown. Add milk. Cook, stirring, until thickened.
Add a little of hot sauce to egg yolks. Return egg yolks to remaining sauce. cook.
Stirring for 1 minute. Add seasonings. Combine vegetables and sauce.
