Materials
- 1 c cut green beans
- 1 c peas or lima beans
- 1 c carrots Sliced
- 1/2 head cauliflower cut into
- 1 flowerets
- 1 water Boiling
- 1/2 c mushrooms sliced
- 2 T butter
- 2 T flour
- 1 c hot milk
- 2 egg yolks beaten
- 1/4 t salt
- 1/4 t black pepper
Instructions
- Cook vegetables except mushrooms in small amount of boiling salted water for 35 minutes use 1/2 teaspoon salt per quart of water.
- Drain. Saute mushrooms in butter. Blend in flour. Brown. Add milk. Cook, stirring, until thickened.
- Add a little of hot sauce to egg yolks. Return egg yolks to remaining sauce. cook.
- Stirring for 1 minute. Add seasonings. Combine vegetables and sauce.
